Nanners!!

I had some very "ripe" bananas staring at me on my shelf alll last week. I thought "what am I going to do with these? i might as well just throw them out because there is no reason to go spend $10 on ingredents to use up the almost-rotten bananas". I had given up hope until Saturday morning... I was planning on breakfast with KKBFF and Kimbo-Majorette but they sketched and didn't wake up in time. So there I was, craving hot comfortable deliciousness. I returned to my shelf...took stock of what I had and lo and behold I have the ingredients to make MUFFINS! i LOOOOVE muffins. I was so very excited. I used a recipe I had in the cabinet with a few changes. I will post the recipe that I used.

Banana-Add nuts if you want- Muffins
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas mashed {i only had 2 nanners so I used about 1/2 cup of applesauce also}
3/4 cup white sugar
1 egg
1/3 cup butter, melted
{i love cinnamon and nutmeg so I added a dash of those also. Do it if you want to. And you do.}

1. Preheat oven to 350 degrees. Either grease your muffin pan or use liners...like this (fancyflours.wordpress.com)

2. Sift flour, baking poweder, baking soda, and salt. Set aside.
3. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture and mix until smooth. Scoop into muffin pans.
4. Bake in preheated oven for 10-15 minutes and large muffins for 25-30 minutes. (When the muffins are done they will spring back when lightly touched)

5. Pop one of those babies out of the pan, spread some more butter on it (you know you want to. nothing like a hot buttered muffin.). Devour the little muffie.
