- I baked 16 boxes of Funfetti Cookies. I got about 40 small cookies from every box. 16x40=640.
- 3 tests. Glad that's over.
- Graduate School applications are done. it's out of my hands and feels so good.
- Miss Auburn campaign week. busy busy
- Minimal running. Nashville is creeping up!
- Need to go to the grocery store. My goal is to try and cook one new recipe per week. I haven't decided what this week will be.
- No more sweets until I complete 13 miles. :) I have a problem. We will have to find something else to fill the cookie/cupcake/ice cream shaped void that shall be in my heart.
- The high today is 65. Earlier this week it barely crept above 35. I'm am so ready for Spring. It's my favorite season.
- KkBFF and I are meeting the Mama today in Montgomery. Dad and Will are very lucky to be in the Bahamas this week for a fishing trip! How is that fair? Anyway. I'm ready to see my Mama. I need some Mama Love.

ReplyDeleteIf you are looking for a recipe, I made up a great chicken recipe last night. I made it for Codi and she will tell you it is great. I dont have a title for it so for now we can call it LaCodi Chicken. This is what it is.
LaCodi Chicken
2 Chicken breasts (washed and dried)
1/2 cup of sour cream
3/4 cup of red onion (diced)
1/2 cup of chopped flat leaf parsley
1/2 clove of garlic
2 tablespoons of olive oil
salt and pepper
Salt chicken on both sides and then dip them in sour cream. Place them in 9"x9" square pan. Combine onions, parsley, and garlic with 1 tablespoon of oil. Put onions on top and around chicken. drizzle 1 tablespoon on top of chicken and onions. salt and pepper them and put it in the oven for 40-50 minutes at 350 degrees.
Now, I have these cookbooks that my mother gave me that you can borrow if you would like. they are a collection of recipes from home ecomomics teachers around Alabama in the 70s. they are great. There are a lot of good things in there, including sweets. when you get to the 13 miles, I want you to try out one specific thing for me. I cannot bake very well....
